
Chocolate Brownies
Ingredients (makes 9)

1 can black beans (400g, drained and rinsed well, drained weight 235g ish)
2 tbsp cacao powder (I like the naturya brand but any good quality cacao works)
40g oats (not the quick cook)
¼ tsp salt
75g maple syrup
40g melted coconut oil or olive oil (depends on which flavour you prefer, I used coconut)
1 tsp vanilla extract
½ tsp baking powder
½ a cup chocolate chips (I used about 50g of a bar of 85% dark chocolate cut up)
Big handful of raspberries (I used frozen cherries as Graham doesn’t like raspberries)
Method
1. Preheat the oven to 180 degrees C
2. Add everything except for the chocolate chips and raspberries to a blender or a food processor and blitz until smooth
3. stir in half the chocolate chips and then pour into a lined tin (I used a loaf tin)
4. Scatter the rest of the chocolate and the raspberries over the top
5. Bake for 15-18 mins and let cool before slicing (I like mine from the fridge so they firm up a bit)
Based on 9 portions, each portion delivers approx 5g protein and 4g fibre so a great sweet treat for after your tea, that is also working hard for you behind the scenes.
I cut mine into 8 and had already eaten 2 by the time I took the photo - oops!
