'Home Made S L A W'
An easy home recipe (no cooking involved just a bit of chopping and grating) for a clever swap that I now do all the time - home-made coleslaw:
This makes a big plastic tub (650g), you can obviously amend the ingredients, quantities and proportions to suit you/your family.
100g carrot, I think grating carrot is easier than finely chopping it, but you do you! (about 1.5 medium carrots)
100g red onion, finely sliced (this was 1 small red onion as I don't like it too oniony!)
100g raw sprouts, finely chopped/shredded (I love a sprout, don't judge until you've tried it!)
200g white cabbage, finely sliced (this was about 1/6 of my cabbage as I think we bought the biggest one in Aldi!)
150g Greek Yoghurt (not Greek style - I like the FAGE 5% fat one for this but Aldi do a lovely 10% fat one that I also use if I have it in)
A sprinkle of sea salt flakes and a grind of black pepper, give it a good mix and you're done!
Mine keeps in the fridge for a week or so, I just stir it before I serve it!
